About this recipe

The classic Mac n' Cheese made richer and more festive with Quezo de bola!

Prepare the following

Spoon

Ingredients

500 g Penne, cooked as per package instructions, drained and set aside
2 cup Quezo de Bola, grated
4 cloves Garlic, chopped
1 pc Onion, small, chopped
2 cups Spinach, rough-chopped leaves only
1 cup Yellow bell peppers, diced
1/2 tsp Sea salt
3 tbsp Butter
2 tbsp Flour
1 1/2 cans Alaska Classic Evaporated Filled Milk 360mL Buy now
1 1/2 cups Chicken broth, using 1 cube bouillon and 1 1/2 cups hot water
1/2 tsp Pepper, freshly ground
1 tbsp Yellow mustard

Topping

5 pc Basil leaves, chiffonade

Procedure

Tick the circle to once you're done with the procedure.

in a large frying pan over medium heat, sauté 1 chopped onion until translucent.
increase heat to medium-high and then add 4 cloves of chopped garlic, 2 cups chopped spinach, 1 cup diced yellow peppers and ½ tsp salt.
stir constantly and cook for about 6-8 minutes or til vegetables are just tender.
Transfer vegetables to a plate and set aside.
in the same pan, over medium heat, melt 3 tbsp of butter and stir in 2 tbsp of flour and cook the mixture for a minute.
stir in 1 ½ large cans of alaska classic evaporated filled milk.
melt 1 chicken cube in 1 ½ cups of hot water and stir into the mixture.
bring the mixture to a boil as you stir continuously.
Add 1 tbsp of yellow mustard.
Add the 1 ½ cup of grated Quezo de Bola and turn off the heat.
stir in the cheese until it has melted completely.
stir in the 1/2 tsp of pepper and the cooked vegetables.
stir in 500g of penne, cooked al dente, and pour into a serving dish.
Top pasta with the remaining 1/2 cup of grated quezo de bola and basil.
