Ingredients

Custard Filling

1 pack Alaska Créma All-purpose Cream 250mL
1 tsp Vanilla extract
3 pcs Egg yolks
1 pc Whole egg
1/2 cup Sugar
1 1/2 tsp Cornstarch
1 cup Alaska Classic Evaporated Filled Milk 370mL Buy now

Crust

1 kg Puff pastry
1/2 cup Butter, melted
1/4 cup Sugar

Procedure

Tick the circle to once you're done with the procedure.

Pre-heat your oven to 200ºC.
in a sauce pan, heat alaska créma all-purpose cream. should be hot but not boiling.
add in the vanilla extract to infuse flavor.
in a separate bowl, combine eggs, sugar and cornstarch until sugar is fully dissolved.
mix in 1 ladle of the hot cream to the egg mixture to temper.
then, add the egg mixture to the cream mixture on the pot while continuously mixing until the mixture thickens.
Let it boil for a bit, then lower the heat. If the custard becomes too thick, water down the custard a bit with Alaska Classic Evaporated Filled Milk. Custard should be thick enough to pipe.
remove from heat and transfer to a shallow pan to cool. cover the custard surface with cling wrap to prevent a film from forming. transfer to a piping bag once cool.
Spread out the puff pastry sheet and cut out 4 inch circles.
pipe custard in the middle of the puff pastry. fold the pastry in half and pinch the edges with a fork to seal.
just before baking, brush butter on the surface of the puff pastry, then sprinkle some sugar.
bake for 15 minutes or just until the pastry turns golden brown and the sugar caramelizes.
allow to cool for 3-5 minutes before serving.
