Prepare the following

Spatula
Mixing Bowl
Sauce Pan
Sifter

Ingredients

10 pcs Egg yolks
1 cup Coconut juice
1 cup Sugar
1 pc Star anise
2 1/2 cups All-purpose flour
1 tbsp Baking powder
1/4 tsp Salt
1/2 cup Butter at room temperature
1/4 cup Canola oil
1 can Alaska Créma-Asada 150mL
Food coloring of choice: blue, pink, green, red

Topping

1 tbsp Butter, for brushing
1/4 cup Sugar for dusting

Procedure

Tick the circle to once you're done with the procedure.

preheat your oven at 350f. line molds with cupcake liners.
In a mixing bowl, whisk egg yolks until smooth.
boil the coconut juice and sugar over low heat for 5 minutes. add in the star anise to the syrup at the last minute. set aside to cool.
in a bowl, sift together flour, baking powder, and salt together until well mixed. in a separate mixing bowl, whip the butter until smooth and pale. add in the egg yolks from earlier and continue whipping for a minute. add the oil, coconut syrup, and alaska créma-asada and mix continuously. add the flour mixture and mix until just incorporated. do not overbeat.
Divide the batter in 4 bowls and mix each batter with a different food coloring.
pour the batter into the prepared molds and bake for 18-25 minutes or until a toothpick inserted comes out clean.
once baked, allow the cupcakes to cool down slightly.
while still warm, brush tops with margarine and sprinkle with sugar on top.
